Spicy Beef with Peppers

This is a lovely rich & flavoursome stew using only a few ingredients. Using a slow cooker will guarantee tender, fall apart beef & using a condensed soup gives a creamy sauce which will taste like you've slaved for hours!

Serve with rice or crusty bread...or both obviously!

 

Serves 4   Approx 1.20 per serving

Prep time 10 minutes   Cooking time 8 hours on low setting (check your manual)

Ingredients

500g diced beef

2 red peppers,cut into strips

1 onion, halved & sliced

1 tin condensed tomato soup

2tsp dried coriander

1 1/2tsp paprika

1/2-1 tsp cayenne pepper

1 tsp garlic powder or 2 crushed cloves

2tbsp plain flour

In a small dish, mix together the flour, coriander, paprika, cayenne pepper & garlic powder (if using).

Put the beef into a mixing bowl & sprinkle over the seasoned flour & add some salt & pepper. Toss the beef so that it gets well coated.

Put the peppers & onions into the slow cooker dish & add the beef on top.

Pour in the tomato soup then fill the can halfway with water & add that too.

Stir well, put the lid on & set to low for 8 hours.

 

 

 

 

 

Serve with rice or crusty bread.
