Sardine & Tomato Spaghetti

I loved going on school trips as a child, mainly because it meant that I would get my favourite packed lunch! My Mum would always get me the nice soft bridge rolls & fill them with Sardine & Tomato paste!  I have been thinking of a way to incorporate it into a recipe for some time & I have finally done just that. It has also turned out to be one of my cheapest & easiest recipes!

 Ingredients

  • 2 tins sardines in spring water, drained & flaked
  • 200g cherry tomatoes, halved
  • 150ml 1/2 fat creme fraiche
  • 2 heaped tbsp chopped fresh parsley, plus extra to garnish
  • Salt & pepper
  • 240g spaghetti

Cook the spaghetti in a large pan of boiling salted water according to pack instructions.

Heat 1 tbsp oil in a large frying pan over medium heat & add the tomatoes.

Cook until they are starting to break down then season with salt & pepper & add the flaked sardines.

Stir in the creme fraiche then allow to cook for one minute before adding the parsley.

Drain the spaghetti & add to the sauce.

Toss to coat & serve immediately garnished with extra parsley.
