Tomato & Herb Pasta

Lovely, fresh tomatoes & herbs in a creamy, guilt free sauce! I used parsley but you can use whatever fresh herbs you like!


Serves 4   Approx 40p per person

Prep time 10 minutes   Cooking time (inc pasta) 20 minutes

240g short pasta (Fusilli works well)

200g cherry tomatoes, sliced into 4

200ml 1/2 fat creme fraiche

3 tbsp chopped fresh herbs


salt & pepper

Cook the pasta, drain & set aside.

Add 1 tbsp of oil to a large frying pan over medium heat. Add the tomatoes & cook until they start to break down. Reduce the heat.


Stir in the creme fraiche & allow it to heat through before adding the herbs.

Season with salt & pepper & allow to simmer gently for 3-4 minutes.

Add the pasta to the sauce & toss to coat.


Serve immediately.
