Lamb & Potato Croquettes

As lamb mince is always more expensive it's a good idea to try & make it go further.

These croquettes are filling & tasty, I've gone for Rosemary & Garlic here but you can add whatever flavours you like.

 

Serves 4 (makes 8 croquettes) Approx 1.20 per person

Ingredients

  • 500g lamb mince
  • 400g cold mashed potato
  • 1 tsp dried rosemary
  • 1/2 tsp garlic powder or 1 crushed clove
  • salt & pepper
  • 4 tbsp dried golden breadcrumbs
  • 1 egg beaten with 1 tbsp water
  • 3 tbsp plain flour

Place the mince, potato & seasoning into a large mixing bowl.

Mix everything together with your hands then divide the mixture into 8 equal portions.

Shape each portion into a fat sausage shape.

Dip first into the flour, then the egg & finally roll the croquette in the breadcrumbs making sure they are coated well.

Place them on to a baking tray & into the fridge for about 20 minutes to chill & firm up.

Pre-heat the oven to 180Fan/200C/Gas 6

Remove the croquettes from the fridge & cook in the oven for 25 minutes.

Serve with your choice of veggies.
