3 Cheese Pasta

If you love cheese as much as I do then you will love this!

From creamy mascarpone to sharp blue cheese & strong & punchy parmesan this dish is a great "help yourself" option if you are entertaining.

I will leave it to you to choose which blue cheese you go for. I like to use a creamy blue but if you like your cheese more on the stronger side then a Danish Blue will work fine.


Serves 4    Approx 72p per serving

  • 350g penne pasta
  • 200g frozen spinach
  • 85g blue cheese, crumbled
  • 250g tub mascarpone cheese
  • 25g grated parmesan
  • a pinch of chilli flakes-optional
  • a pinch of pepper

Cook the pasta in a large pan of boiling salted water for the time stated on the packet adding the spinach 5 minutes before the end of cooking.

Drain & transfer to a shallow, ovenproof dish.

Add the blue cheese on top with the chilli flakes (if using) & a little pepper.

Spoon the mascarpone over then sprinkle the parmesan on top.






Place under a hot grill for about 5 minutes or until the mascarpone has melted.

Serve with a green salad & garlic bread if you like.
