sausage & pea pilaf

When I looked up the definition of "Pilaf" it was described as rice which is cooked in a seasoned broth! Well this recipe does cook the rice in stock so...close enough!

This is a great way to use leftover cooked rice & sausages too.

Serves 6 Approx 47p per person

Prep time 10 minutes Cooking time 20 minutes

 

 

Ingredients

6 cooked sausages (of your choice), sliced

250g basmati or long grain rice (either a pouch or precooked)

1 onion, chopped

1 clove garlic, crushed

200ml chicken or veg stock

1 tin chopped tomatoes

70g frozen peas

Heat about 1 tbsp oil in a large frying pan on a medium heat.

Cook the onion for 3 minutes then add the garlic.

Add the tomatoes & season, simmer for 5 minutes.

Stir in the rice, sausage & stock, check the seasoning then simmer for 10 minutes.

Serve.
