Cheesy Beef Jackets

Ingredients

4 jacket potatoes

450g beef mince

1 onion

3 finely chopped mushrooms

1 garlic clove

2 cans chopped toms

1 tbsp tom ketchup

1 tbsp of worchestershire sauce

2 tbsp of mixed herbs

salt and pepper

grated cheese

 

Cook the jacket potatoes until skins are crispy and then cut into half.

Fry the beef for 8 - 10 mins until brown add the onion, mushrooms and garlic and cook for a further 3 mins on a low heat.

Add the toms, ketchup, worchestershire sauce, herbs salt and pepper, and on a low heat cover and simmer for 30 mins.

Scoop out the potato from the jackets and place in a bowl, mash with milk and butter.

Half fill each portion of jacket with the mince mix and place some potato on top. Top with grated cheese and grill for 5 - 10 mins until golden brown.

Sauasage Pie

Ingredients

6 medium size potatoes

2 tomatoes

Tin of sweetcorn

8 thick or 12 thin sausages

Cheese sauce mix + milk

 

Boil the potatoes until cooked then mash with milk and butter.

Grill the sausages and add the tomatoes to the grill near the end to cook through after slicing.

Cook the sweetcorn.

Mix the cheese sauce mix and stir until thick and creamy.

Using a casserole dish place the sausages on the bottom, layer the tomotaes ontop of the sausages and pour over the sweetcorn after draining. Layer the top with mashed potatoes and pour over cheese sauce.

Place in oven at 180 oc for 15 - 20 mins and serve immediately!
