Italian Style Roasted Tomatoes

These make a lovely accompaniment to any pasta dish, pizza topping or as a snack on thick crunchy toast!


Serves 6 Approx 15p per serving

Prep time: 5 minutes Cooking time: 40 minutes

  • 6 ripe tomatoes
  • 2 tsp dried basil
  • 1 tsp dried oregano
  • 2 tbsp olive oil
  • 2 tbsp grated parmesan cheese-optional



Slice the tomatoes in half & place cut side up in a baking tin or ovenproof dish.

Drizzle the tomatoes with olive oil & sprinkle over the herbs.

Season with salt & pepper.

Place in the oven for 40 minutes.





If you are using the parmesan remove from the oven after 30 minutes, sprinkle the parmesan over the tomatoes & place back in the oven for another 10 minutes.






Serve with your favourite pasta dish as a side or on toast.
