Sandwich Fillers

Making packed lunches can be a pain & it's very easy nowadays to pick up ready made sandwiches to save time. You can save even more time & money buy making some tasty sandwich fillers in advance!

Here are some yummy ideas for your sarnies, quantities are approximate & you can tweak them to suit. Each one should be enough for 4 sandwiches obviously depending on how generous you are!

You can use either full or half fat mayo or if you want to be really good low fat plain yoghurt works really well too!

You will need a few lidded containers.

Tuna & Spring Onion

2 tins tuna, drained

1 bunch spring onions, chopped

3 tbsp mayonaisse

pinch of salt & black pepper

Combine all the ingredients in a bowl then transfer to a container with a lid & keep in the fridge.

Egg Mayo & Cress

6 eggs hard boiled & shell removed

1 pack cress

3 tbsp mayonaisse

salt & pepper

Put the eggs into a bowl & mash with a fork. Add the cress & mayo, season then combine. Place into a lidded container & keep in the fridge.


Cheese & Celery

160g grated cheese

2 sticks celery, chopped

3 tbsp mayonaisse

pinch of pepper

Combine all the ingredients together in a bowl & transfer to a lidded container. Keep in the fridge until ready to use.

Coronation Chicken

200g leftover chicken, shredded

3 tbsp mayonaisse

1 tbsp mild-medium curry powder

20g sultanas (optional)

salt & pepper

Place the chicken into a bowl with the sultanas (if using)

In a smaller bowl mix together the mayo & curry powder, salt & pepper.

Add the curry mayo to the chicken & mix well until the chicken is coated.

Transfer to a lidded container & place in the fridge.

Pesto Chicken

200g leftover chicken, shredded

2 tbsp mayonaisse

3 tbsp ready made pesto

salt & pepper

Place the chicken into a large bowl.

In a smaller bowl mix together the mayo & pesto then season with a little salt & pepper.

Add the pesto mayo to the chicken & mix well until the chicken is coated.

Keep in a lidded container until ready to use.
