Marmalade Sandwich Pud

This is basically a bread & butter pudding made with marmalade sandwiches & would probably appeal to a certain little bear from Darkest Peru!


Serves 4 Approx 44p per person


Prep/chilling time 40 minutes Cooking time 40-45 minutes


Ingredients

6 slices white bread, crusts removed

30g butter, softened

60g marmalade

2 whole eggs & 1 egg yolk

1 rounded tbsp caster sugar

½ pint milk

grated zest of ½ an orange

2tsp granulated sugar mixed with 1 tsp ground cinnamon

Spread the bread with the butter, then spread the marmalade on 3 of the slices & use the other 3 to make sandwiches.

Cut in half & arrange neatly(ish) in a baking dish.

Mix the eggs & egg yolk with the sugar & orange zest & stir in the milk.

Pour the custard carefully over the marmalade sandwiches making sure everything is covered. Press it all down with your hands if necessary!

Cover the dish with cling film & place in the fridge for about 30 minutes.

Heat the oven to 170C/150 Fan/Gas 3 & remove the pudding from the fridge.

Sprinkle over the sugar & cinnamon.

Bake for 40-45 minutes or until the custard is set & the top is browned & crusty.

Serve with cream, ice cream or custard!!
