Tea Loaf

This is delicious as it is but even better toasted & spread with butter!


Serves 10 Approx 10p per slice


Prep time 10 minutes (plus soaking time!) Cooking time 1hr-1hr 20 minutes


340g self raising flour

100g caster sugar

2tsp mixed spice

1 egg

250g sultanas

300ml strong black tea

Pour the tea over the sultanas & allow to soak for 2-3 hours or preferably overnight.

Preheat the oven to 180C/Fan160/Gas4 & line a loaf tin with some baking paper.

Mix all the dry ingredients together in a bowl then add the fruit & tea & the egg.

Mix until combined (it will be quite sticky!)

Pour the mixture into the prepared tin. 

Bake for 60-80 minutes or until a skewer or knife comes out clean.

Serve warm or toasted with butter!
