Pesto & Tomato Toasts

This is a great way to use up leftover pesto & you can use either green or red. Leave out the cheese if you prefer or use sundried tomatoes instead of fresh. A great, quick lunchtime snack!


Serves 2 Approx 30p-40p per serving (depending on how you like it!)

Prep time 10 minutes Cooking time 2-3 minutes under the grill.

4 slices of bread (your choice)

half a jar of pesto

1 tomato, thinly sliced

grated cheese

freshly ground black pepper

Under the grill, toast the bread on one side until golden then turn over & only lightly toast the other side.

Remove the toast from under the grill & spread the lightly toasted side with pesto making sure you get it right to the edges.

Top with a little cheese (if using) then slices of tomato.





Put back under the grill until the cheese is bubbling.

Add a grind of pepper & serve immediately.
