Spaghetti with Broccoli, Lemon & Black Pepper

This is a deliciously light & fresh dish & good for you too!!


Serves 2 (easily doubled) V  Approx cost per person 75p

140g spaghetti

140g broccoli, broken up into small florets

150g ½ fat crème fraiche

2 cloves garlic, crushed

juice & grated zest ½ a lemon

salt & freshly ground black pepper

Cook the pasta following pack instructions.

Place the broccoli in boiling salted water & cook until tender.

Fry the garlic in a little oil for 1 minute, then add the crème fraiche. Stir & simmer gently.

Add the lemon juice & zest, then season with salt & plenty of black pepper.

Reserve a small cup full of the pasta water, then drain the spaghetti. Add the spaghetti & broccoli to the sauce & toss well to coat.

Serve immediately.
