Sarah's Chilli

Everyone has their own version but this is mine-hence the name! The chilli tastes even better if left for a day or 2, just keep it well covered in the fridge!

Ingredients

  • 500g minced beef
  • 1 red onion, finely chopped
  • 1 red pepper, finely chopped
  • 2 cloves garlic, crushed
  • 1x400g tin chopped tomatoes
  • 1x400g tin red kidney beans, drained & rinsed
  • 1 tbsp tomato puree
  • 1 beef stock cube
  • 1 tbsp Worcestershire sauce
  • a pinch/1tsp chilli powder, depending on how hot it is
  • Salt & pepper

Place a large frying pan over a medium heat & brown the mince in batches then place into a large saucepan.

Add about I tbsp of oil to the frying pan & cook the peppers for about 3 minutes then add the onion & cook for another 3 minutes before adding the garlic. Once the peppers & onions are soft place into the saucepan with the mince, worcestershire sauce & chilli powder. Crumble over the stock cube & stir.

Put the pan on a low to medium heat & stir in the tomatoes, simmer for about 10 minutes then add the kidney beans. Stir again & allow to simmer again for 15 minutes.

Serve on its own or with rice.
