Lamb & Courgette Bake

Tasty lamb mince layered with courgettes & a little cheese! This a filling meal & great served with salad & toasted pitta bread. I slice the courgettes with a mandolin (with a finger guard!!) but an ordinary kitchen knife will work just as well.

Ingredients

  • 500g lamb mince
  • 1 onion, chopped
  • 1 red pepper, chopped
  • 2 medium courgettes, sliced thinly lengthways
  • 2 tbsp tomato puree
  • 1 tsp paprika
  • 1 tsp dried coriander
  • 2 cloves garlic, crushed or grated
  • 80g grated cheddar
  • salt & pepper

In a large frying pan over medium heat brown the mince in batches & set aside.

Add 2 tbsp of oil to the pan & cook the onions & peppers until soft, add the garlic & cook for another 5 minutes.

Add the paprika, coriander & tomato puree & cook, stirring for another 5 minutes.

Pour in about 100ml of cold water, season with salt & pepper, stir & leave to simmer for about 10 minutes.

Pre-heat the oven to 210C/190 Fan/Gas 7/

Get an ovenproof dish & put half of the mince into the bottom.

Lay slices of courgette on top. Overlap them if you can to avoid gaps.

Sprinkle on half of the cheese then add another layer of courgette.

Add the rest of the mince then top with another layer of courgette then the rest of the cheese on top.

Place in the oven for 25 minutes, the top should be golden & bubbling.

 

Serve with salad & toasted pitta breads.
