Tomato Pasta Sauce 3 Ways!

This pasta sauce is so easy to make & the best part is that you can adapt it to make it completely different! I have made it three variations but with a little imagination you can add your own twists!

 

Makes approx 500ml of basic tomato sauce at approx 96p

TOMATO & BASIL

 

Ingredients

1 tin chopped tomatoes

1 small onion, finely chopped

2 cloves garlic, crushed

1 tsp dried basil

1 tbsp tomato puree

50ml water

salt & pepper

 

1 tsp sugar

Heat 1 tbsp oil in a large saucepan over medium heat. Cook the onion for 5 minutes then add the garlic & cook for another minute before adding the basil. Continue to cook until the onion is soft.

Stir in the tomato puree & cook for another minute.

Pour in the tinned tomatoes & 50ml of water. Stir well & allow to simmer for 5 minutes.

Add the sugar & season with salt & pepper.

 

Simmer on low-medium heat for about 30 minutes or until thickened & reduced. Check the seasoning while it's cooking.

Remove from the heat & allow to cool before whizzing until smooth in a blender or in the pan with a stick blender.

 

Store in a sterilised jar & place in the fridge for 3-4 days or you can freeze it. Just allow to cool completely, place in a zip top freezer bag & pop in the freezer for about one month.

TOMATO & BLACK OLIVE

 

 

Follow the recipe as above adding 65g of chopped black olives after the tomato puree.

TOMATO & ANCHOVY

 

 

Again, follow the recipe above but add 1 tin of drained & chopped anchovies to the onion & garlic before the tomato puree.

 

 

To use just heat gently in a saucepan & add to your favourite pasta!
