Harissa Lamb with Lentils & Cherry Tomatoes

This recipe is at the pricier end of the scale as lamb mince is more expensive as is Harissa paste! However by using lentils & tomatoes to bulk it out you should be able to feed at least 4 people (maybe 6 if you're lucky!) & this would make a lovely weekend treat!

Serve with a little soured cream & Rosemary Flatbreads! (Link at the end of this recipe)

Ingredients

  • 500g minced lamb
  • 1 90g jar Harissa paste
  • 1 tin lentils, drained
  • 300g cherry tomatoes, halved
  • salt & pepper

 

Place a large frying pan over a medium heat but don't add any oil. Brown the mince in batches.

Place all the mince back in the pan & stir in the Harissa paste. To get all of it out fill the jar with water, replace the lid & shake. Pour the water into the pan & cook for 3 minutes stirring.

Add the tomatoes & simmer until they start to break down, season with salt & pepper.

Stir occasionally.

Transfer the lamb & tomatoes to a large saucepan & add the lentils, stir well & check the seasoning then allow to simmer for 15 minutes.

Serve with soured cream & Rosemary Flatbreads.
