sticky bbq chicken

The perfect crowd pleasing food!

Taking the time to baste the chicken is definitely worth it & the result gives you that lovely sticky, crispy skin.

The sticky bit is all thanks to my secret ingredient-Marmalade! So it's not a secret anymore & all the ingredients are ones you should find in your store cupboard!

 

Serves 3-4 but easily doubled Approx 83p per person

Prep time 10 mins Cooking time 45 minutes

 

Ingredients

6 chicken thighs

50g unsalted butter

50g tomato ketchup

50g brown sauce

1-2 cloves garlic, crushed

2 tbsp worcestershire sauce

1 tbsp marmalade

 

salt & pepper

 

 

 

Pre-heat the oven to 180 Fan/200C/Gas6.

Place the chicken thighs onto a non-stick baking tray (or line one with greased foil).

Pat them dry on both sides with some kitchen paper.

 

Place in the oven for 25 minutes. Meanwhile make the BBQ coating.

 

Put all the other ingredients into a saucepan over a low-medium heat & allow everything to melt together. Set aside until the chicken is ready to come out of the oven.

Once the 25 minutes is up, remove the chicken from the oven & coat with the BBQ sauce, flip the thighs over & coat the other side.

 

Put the chicken back in the oven for 8 minutes, then remove, give them another basting & return to the oven.

Repeat after another 8 minutes then return the chicken to the oven, turn the temperature up to 200Fan/220C/Gas7 & cook for a final 5 minutes.

Serve immediately.
