This is actually one of the first cakes I ever made back in the days when cooking & baking was new to me! A lovely, sticky & moist cake it is great as it is but try it warm with some custard or ice cream & it turns into a delicious pud!
Cost approx £1.80 Serves 8 (approximately!!)

Ingredients
400g (about 2 medium) cooking apples, peeled, cored & chopped
150 unsalted butter or baking fat
150g soft brown sugar
3 large eggs
2 tbsp Golden Syrup
200g self raising flour
2 tsp ground ginger
Pre-heat the oven to 180C/Fan 160/Gas 4
Grease & line a 20cm cake tin with baking paper.
Beat the butter & sugar together until light & fluffy then mix in the eggs one at a time. Beat in the syrup.
Sift in the flour & ginger & fold in to the mixture then fold in the apple.
Pour the mixture into the prepared tin & bake for 1 hour 20 minutes. Check with a skewer or tip of a knife, if it comes out clean it is ready.
Allow to cool in the tin for 10 minutes then place on a wire rack to finish cooling.
