Smoky Sausage & Rice One-Pot

Smoky sausage & spicy rice, a tasty & satisfying combo-perfect!


Serves 4-6, approx 60p per person

Ingredients

1 red onion, chopped

1 red pepper, chopped

2 garlic cloves, crushed

1 tin chopped tomatoes

1 tbsp tomato puree

500ml hot chicken stock

250g rice (basmati or long grain)

1 cooked smoked sausage, sliced (find in the cooked/cured meat section of the supermarket)

1 cup frozen peas

1tsp paprika

salt & pepper

 

 

 

 

 

Fry the onions & peppers in some oil until starting to soften. Add the garlic & cook for another minute.

 

 

 

 

 

Stir through the sausage then add the rice & paprika, make sure the rice is well coated in the oil. Add the stock & cook for about 5 minutes.

 

 

 

 

Add the tomato puree & mix thoroughly, stir in the tomatoes & peas, cover & simmer for about 10-15 minutes or until the liquid has been absorbed & the rice is cooked. Serve!
