A delicious snack on their own or enjoy them with some salad or soup!
Makes 4-5 Fritters, approx 23p each.

60g self raising flour
1 small can sweetcorn, drained
2 spring onions, finely chopped
Salt & Pepper
Place the flour in a bowl & make a well in the centre. Add the egg & a little milk & mix well. Keep adding the milk until you have a smooth batter.
Add the sweetcorn & spring onion & mix well.
Place a large frying pan over a medium heat & add about 1tbsp oil.
Drop about a tbsp of batter in the pan & repeat until all the batter is gone (this will depend on how big your pan is!)
Cook until browned on the bottom then flip them over. Once cooked they should feel quite firm.
