cheesy pesto puffs

Two of my favourite things-cheese & pesto encased in flaky puff pastry......................I'm sorry I drifted off there! These are great for a snack or party & it's easy to double up the recipe!


Makes 8 Approx 27p each

Prep time 15 minutes Cooking time 15 minutes





1 sheet ready rolled puff pastry

½ jar pesto (I used green but red would work just as well!)


80g grated cheddar

Pre-heat the oven to 180Fan/200C/Gas 6.

Lay the pastry out on to a floured work surface &, working lengthways roll it out to the thickness of a 2p coin.


Using a round cutter approximately 11cm diameter or a small plate or saucer cut out 8 rounds. Roll each circle to an oval shape.

Place 2 tsp pesto in the middle of the pastry making sure you leave a border. On top of the pesto put 2 tsp grated cheese.

Brush one edge of the pastry with egg wash & carefully fold over pressing the edges down with a fork.


Repeat with the rest & place on a baking tray lined with baking paper. Make a small hole in each one & brush with egg wash.

Place in the oven for 15 minutes until golden brown.


Serve warm or cold.
