Cheesy Soda Bread

I love this loaf! So easy to make, no proving so no waiting. Just mix & bake!

It is delicious on it's own but lovely with soup or even a stew! I used a loaf tin but you can just place it on a floured baking tray if you prefer.

 

Serves 4 Approx 30p per serving

Prep time 10 minutes Cooking time 40 minutes

 

 

 

Ingredients

250g plain flour

1 tsp bicarbonate of soda

1 tsp baking powder

pinch of salt

1 egg

240ml soured cream

 

100g grated cheddar

Pre-heat the oven to 170Fan/Gas5/190C

Place all the dry ingredients into a mixing bowl & make a well in the centre.

 

Pour in the cream & the egg & mix with a fork. When the mixture starts to come together use your hands to make sure everything is mixed thoroughly.

Don't worry if the mixture seems quite wet it will be fine!

 

Now you can either put the dough into a floured loaf tin or shape it into a round on a baking tray.

Bake for 40 minutes then cool on a wire rack.

 

Should keep for 2-3 days if wrapped tightly in cling film.
