This deliciously creamy chicken dish has the tang of mustard & the sweetness of honey that go together so well, & it's surprisingly simple to make
Serves 2 Approx 85p each
Prep time 10 minutes Cooking time 30 minutes
2 chicken breasts, chopped into bite sized pieces
1tbsp runny honey
1tbsp wholegrain mustard (or Dijon)
500ml chicken stock
100ml ½ fat crème fraiche
1 clove garlic, crushed
a handful chopped green beans or frozen peas-optional
Heat some oil in a large frying pan & brown the chicken.
Mix the honey, mustard & garlic into the stock & pour over the chicken. Simmer for about 5 minutes.
Mix 2 tbsp cornflour with 2 tbsp water & stir into the chicken.
Simmer again for 5 minutes then stir in the crème fraiche & season with salt & pepper.
Allow to cook for about 15-20 minutes until the sauce is thickened, add the beans or peas (if using) about 5 minutes before the end.
Serve with rice or new potatoes.
