lemon & coconut biscuits

These two flavours work well together especially in these lovely buttery bites!


Makes about 26 biscuits Approx 6p per biscuit


Prep time 15 minutes Cooking time 10-15 minutes





200g unsalted butter, softened

180g caster sugar

350g plain flour

50g dessicated coconut, plus a little extra for sprinkling

1 egg lightly beaten

1 tsp vanilla extract


Grated zest of 2 lemons

Pre-heat the oven to 170Fan/Gas5/190C.

Place the butter & sugar into a large mixing bowl & beat together. Add the egg & vanilla & beat again. 

Fold in the flour, coconut & lemon zest then bring the dough together with your hands.

Roll the dough into balls of about 1 tbsp each, place them on a lightly greased & lined baking sheet & press them down gently with your fingers.


Sprinkle a little more of the dessicated coconut onto each biscuit.

Bake for about 10-15 minutes or until slightly golden. Allow to cool on the tray before transferring to a wire rack.


The biscuits should keep for about a week in an airtight container.
