Honey & Mustard Carrots

This makes carrots extra special & is so easy! They go with so many dishes so not just for a Sunday.


Makes enough for 4-6 people at approx 55p

Prep time 15 mins Cooking time 30 minutes





1 kg carrots, peeled & cut into batons

3 tbsp runny honey

3 tbsp mustard, I used Dijon but you could use wholegrain

oil for roasting

Pre-heat the oven to 180Fan/200C/Gas 6

Place the carrots into a saucepan of boiling, salted water & cook for 5-6 minutes.

Drain & transfer to a roasting tin, drizzle with oil & put in the oven for 15 mins.

Put the mustard & honey into a microwavable jug or dish & warm on low for about 20 seconds. Remove from the microwave & stir to mix.


Remove the carrots from the oven after 15 minutes & pour over the honey & mustard mixture. Stir to coat & place back in the oven for another 15 minutes.

Serve immediately.
