Potted Stilton with Walnuts

The blend of cheeses makes the stilton creamy & spreadable with the added bonus of delicious crunchy walnuts. I think this would make a great addition to a cheese board! Make them as I have in individual dishes or in a larger serving dish for a buffet. Can be made ahead & kept in the fridge until ready to serve.

Ingredients

200g Stilton

150g cream cheese

60g walnuts

Pre-heat the oven to 140 Fan/160C/Gas 3 & get 4 ramekins or small serving dishes ready.

Remove the cheeses from the fridge & allow to come up to room temperature.

Place the walnuts on a baking tray & place in the oven for 10 minutes. Remove from the oven & allow to cool.

Chop the stilton into cubes & put into a mixing bowl along with the cream cheese.

Mix the cheeses together mashing the stilton as you go.

Spoon the mixture into the ramekins & smooth off the tops.

Chop the cooled walnuts fairly finely (don't worry if you have a few bigger chunks).

Sprinkle a layer of the chopped nuts on top of the cheese.

Place in the fridge to chill for about an hour or until you are ready to serve.

Serve with crackers or thin toast.
