Custard Crumbles

These should really be called "Lockdown Biscuits" as that is when I came up with the idea. I shared the recipe on my Facebook page before I put them on here & they were an instant hit & I got lots of lovely photos from people who follow me with their own versions! So there's not much else to say except..they are great with a cuppa..☕

Ingredients

75g plain flour

75g porridge oats

75g unsalted butter

1tsp baking powder

50g caster sugar

40g custard powder

2 tbsp golden syrup

3tbsp milk

Pre-heat the oven to 160 Fan/180C/Gas 4 & line 2 baking sheets with greaseproof paper or just grease the sheets well if you don't have any.

Put the butter, syrup & milk into a small saucepan over low heat & allow to melt.

Meanwhile mix the dry ingredients together in a large mixing bowl.

Remove the butter mixture from the heat once it has all melted together & allow to cool for a couple of minutes.

Mix the butter mixture into the dry ingredients until combined.

Scoop heaped teaspoons of the mixture onto the baking sheets (don't worry they will spread out & that's fine!)

Bake for about 10 minutes until golden.

Will keep for about 3 days in an airtight tin.
