Jam & Coconut Sponge

This pud is perfect for a weeknight because not only is it quick to put the ingredients together but it takes just 5 minutes to cook! No it's not a miracle of magic but the miracle of the microwave they can do much more than just reheat or defrost!


Serves 4-6 Approx 15p-23p per person

Prep time 10 minutes Cooking time 5 minutes





100g unsalted butter

100g caster sugar

80g self raising flour

20 desicated coconut

2 eggs

2 tbsp milk

3 heaped tbsp jam (of your choice)








Grease the inside of a pudding basin or deep bowl.

Beat together the butter & sugar then whisk in the eggs & milk, adding a spoonful of the flour to stop it curdling!

Fold the rest of flour in along with the coconut.

Put the jam in the bottom of the bowl & pour the sponge mixture on top.

Cover the bowl with cling film & pierce 2 holes.

Microwave on high for 5 minutes then allow to sit for 1 minute.

Carefully turn the pudding out onto a plate & serve warm with cream, custard or ice cream.
