Banana French Toast

*WARNING* This recipe is extremely indulgent!!

I love french toast & serving it with some sticky, caramelized bananas makes it a very special, decadent treat!

 

Serves 1 (easily doubled) Approx 64p per serving

Prep time 5 minutes Cooking time 10 minutes

Ingredients

2 thick slices of white bread

1 small banana, chopped

2 tbsp light brown sugar (if you don't have any white sugar will work too)

80g unsalted butter

 

2 eggs, beaten

Place a large frying pan over medium heat & add 50g of the butter.

Put the beaten eggs into a wide shallow dish or plate. Dip the bread in the egg on both sides making sure it is completely coated.

When the butter has melted carefully place the eggy bread into the pan. Allow to cook for about 3 minutes or until the bread has turned golden & slightly browned in places.

Turn the bread over to cook for another 3 minutes on the other side.

 

When the bread is done place it on a serving plate in a warm place while you cook the bananas.

Add the rest of the butter to the pan & allow to melt. When the butter is foaming add the sugar & stir. Cook for 2 minutes until the sugar has melted then add the chopped banana. Stir to heat the bananas through & coat with the sticky sauce.

 

 

 

 

Top the toast with the bananas & dust with a little icing sugar if you like.

 

Serve immediately.
