Basic Muffins

This recipe is the perfect base to start with & you can go with whatever flavour you like, sweet or savoury! (There's a savoury version at the bottom of this page!)

 

Makes 12 muffins, approx 15p each

Prep/cooking time 30 mins

 

Ingredients(Dry)

140g caster sugar

250g self raising flour

1tsp bicarbonate of soda

 

Ingredients(Wet)

85ml sunflower oil

2 large eggs, beaten

200ml milk

1tsp vanilla extract

 

Your choice of “chunk”

150g eg. chocolate chips, blueberries etc

 

 

Heat oven to 200C/180 Fan/Gas 6 & line a 12 hole muffin tin with paper cases.

In a bowl combine all the dry ingredients & then mix together all the wet ingredients in a jug.

Pour the wet into the dry & mix until just combined, take care not to over mix or the muffins will be tough!

Fold in your choice of chunks!

Spoon the mixture into the cases about 2/3 full & bake for 15-18 minutes until golden, risen & firm.

Allow to cool in the tin for 5 minutes then place on a wire rack.

Will keep in an airtight container for 3-4 days.

For a savoury version:

Use 1 tbsp sugar only & leave out the vanilla.

Replace the milk with 284ml buttermilk, or if you can't get any use ½ milk & ½ plain yoghurt.

Replace blueberries etc with 100 grated cheddar & 1 bunch finely chopped spring onions.

Delicious with soup!
