Broccoli Soup

This is a lovely healthy soup, no cream added or needed! It also freezes well too, so make double & freeze some to enjoy another day!

 

Serves 2 V Approx cost per person 42p

Ingredients

250g broccoli, chopped

1 onion, chopped

500ml hot vegetable stock

salt & pepper

 

 

 

 


Heat a little oil in a saucepan & fry the onion until soft.

 

 

 

 


Add the broccoli & stock, season with salt & pepper & simmer until the broccoli is tender.

Simmer...

 

 

 

Remove from the heat & whizz with a stick blender in the pan until smooth or transfer to a jug blender.

Return to the heat & stir, check the seasoning & serve.

 

 


Alternatively allow the soup to become cold, place into a freezer bag or plastic container & freeze to enjoy another day! Thaw completely before heating.
