Salmon Kedgeree

Kedgeree is a traditional British breakfast dish from colonial India but makes a lovely brunch or light lunch! It is a bit more expensive than some of my other recipes but it would make a great weekend treat!

You could use tinned salmon or even tuna!


Serves 2 Approx £1.50 per person


Prep time 5 minutes Cooking time inc boiling eggs & cooking salmon 20 minutes

Ingredients

2 eggs, hard boiled & peeled then cut into ¼

1 pack of microwavable Pilau rice

½ bunch spring onions, finely chopped

2 skinless salmon fillets, cooked-I get frozen ones & boil them in their plastic wrapper!

2 tsp dried parsley

½ tbsp mild curry powder

Heat 1 tbsp oil in a large frying pan. Tip in the rice & cook for 2 minutes then add the dried parsley then stir in the curry powder.

Add the spring onion & salmon & cook for a further 2 minutes.

Gently stir in the chopped boiled eggs & serve.
