Sausage & Mushroom Pasta

A new way to use a pack of sausages, add some frozen peas if you like & maybe some chilli powder for a spicy kick?!

Ingredients

  • Dried pasta approx 75g per person
  • 1 pack of 8 pork sausages
  • 2x400g tins chopped tomatoes
  • 1 onion, finely chopped
  • 100g Chestnut mushrooms, sliced
  • 2tsp dried Oregano or other dried herbs
  • 2 tsp Worcestershire sauce
  • 2 tbsp tomato puree
  • Salt & pepper

 

Split open the sausages, squeeze out the meat & set aside.

Heat the oil in a large frying pan & cook the onions for about 5 minutes then add the mushrooms & oregano. Cook for another 5 minutes or until the mushrooms are soft then set aside.

Fry the sausage meat, break it up with a spatula or spoon (there will big & small lumps but its all good!)

Once the meat is browned add the onions & mushrooms back into the pan & stir in the tomato purée. Cook, stirring for 2 minutes.

Add the tinned tomatoes, worcestershire sauce, salt & pepper. Stir again & allow to simmer.

While that’s simmering, cook the pasta according to pack instructions.

Drain the pasta then add it to the sausage sauce & mix so that the pasta is well coated then serve!
