This is a lovely side dish for a weeknight as you can use a packet of microwavable rice to be super quick! Serve with chicken or fish or even on it's own-it's that good!
Serves 4 Approx 50p per serving
Prep time 10 minutes Cooking time 10 minutes
2 little gem lettuce, shredded
1 bunch spring onions, chopped
250g cooked rice
1 tsp ground ginger
1 tbsp soy sauce
Heat 2 tbsp oil in a wok or large frying pan.
Add the spring onions & cook for 1 minute then add the lettuce-don't worry it will wilt down! Cook for 5 minutes.
Add the ginger, a good grind of black pepper & the soy. Stir then add the rice.
Stir well to combine everything & continue to cook for about 2 minutes.
