A tasty, filling pasta salad with the bonus of bacon & lovely, crunchy sugar snap peas! A simple dressing using half fat crème fraiche & you have a delicious lunch, dinner or addition to a picnic or BBQ.
Serves 6 Approx 75p per serving
Prep time 10 minutes Cooking time 10 minutes for the pasta.
400g pasta, either Fusilli (twists) or Farfalle (bows)
2 cooked chicken breasts, shredded
4 rashers of cooked smoked bacon, chopped
1 bag sugar snap peas, sliced in half
150ml half fat crème fraiche
1 tsp lemon juice
salt & pepper
Cook the pasta following pack instructions. Drain & allow to cool.
Mix the crème fraiche with the lemon juice & season to taste with salt & pepper.
Put the chicken, bacon & sugar snap peas into a bowl along with the cooled pasta.
Drizzle over the dressing & toss everything together to coat evenly.
Serve immediately or keep in the fridge in a covered container for 2 days.
