Fridge Raid Frittata

Sounds a bit fancy doesn't it?! A frittata is the Italian version of an omelette & what makes it different is that all the ingredients are mixed together at the startit's really simple to put together & a great way of using up leftovers! 

I've used spring onions, cheese & ham here but there's pretty much no end to what you can use so I've added a few suggestions under the list of basic ingredients.

 

Serves2-4 Approx cost per person 75p depending on your ingredients

Prep time 5 minutes Cooking time 20-25 minutes

 

Level 🍴

 Base Ingredients

  • 4 large eggs
  • 100ml low fat crème fraiche
  • salt & pepper
  • knob of butter
  • olive oil

Possible additional fillings- add 2-3 of any of the following

  • chopped spring onions or red onion
  • chopped ham or cooked bacon
  • cooked chorizo or other sausage
  • cheese of your choice either grated or crumbled
  • peppers
  • leftover cooked veg
  • herbs

 

In a large bowl lightly beat the eggs, then add any other ingredients you have chosen. Mix well then season with salt & pepper.

Melt the butter in a large frying pan then add the oil. Pre-heat the grill. Pour in the egg mixture & cook for about 10-15 minutes. You can check by gently lifting the sides with a spatula, it should be a nice brown colour but not burnt.

Take the pan off the heat & place under the grill. Cook for a further 5-10 minutes until cooked through & the eggs are set.

Cut into wedges & serve.
