Makes about 20 biscuits at approx 10p each
100g golden syrup
60g caster sugar
175g plain flour, sifted
1tbsp ground ginger
1tsp bicarbonate of soda
Preheat the oven to 170C/Gas 3, & grease & line two baking trays.
Melt the butter, golden syrup & sugar in a small saucepan for 5-6 minutes until the sugar is almost dissolved.
Remove the saucepan from the heat & stir in the flour, ground ginger & bicarbonate of soda. Set aside to cool for 15 minutes.
Scoop out about a tbsp of the mixture & roll into a ball & repeat with the rest of the mixture, place on the baking trays & press down gently.
Make sure they are spaced about 2cm apart as they will spread during cooking.
Bake for about 10-15 minutes or until golden in colour. Leave to cool on the trays then transfer to a wire
