My Father-In-Law Ron loves ginger & there is plenty in these biscuits! Crunchy on the outside & chewy in the middle they are great for dunking!
Makes about 20 biscuits at approx 10p each
Ingredients
100g butter
100g golden syrup
60g caster sugar
175g plain flour, sifted
1tbsp ground ginger
1tsp bicarbonate of soda
Preheat the oven to 170C/Gas 3, & grease & line two baking trays.
Melt the butter, golden syrup & sugar in a small saucepan for 5-6 minutes until the sugar is almost dissolved.
Remove the saucepan from the heat & stir in the flour, ground ginger & bicarbonate of soda. Set aside to cool for 15 minutes.
Scoop out about a tbsp of the mixture & roll into a ball & repeat with the rest of the mixture, place on the baking trays & press down gently. Make sure they are spaced about 2cm apart as they will spread during cooking.
Bake for about 10-15 minutes or until golden in colour. Leave to cool on the trays then transfer to a wire rack.
Serve with a lovely cup of tea!
