Rich Beef Stew

This is probably my favourite slow cooker recipe, perfect for Autumn & Winter with plenty of veg & melt in the mouth beef! Add some beer or even a splash of red wine or port if you like, but I feel you don't need it as it is beautifully rich as it is!

 

Serves 4 Approx 78p per serving

 

Prep time 10 minutes Cooking time 8 hours on low setting (check your manual)

 

Ingredients

500g diced beef, trimmed of any hard fat

3 medium carrots, sliced thickly

3 sticks celery, chopped

1 onion, chopped

2 beef stock cubes

2 tbsp plain four

1 1/2 tsp dried parsley

1/2 tsp mustard powder

1 tbsp worcestershire sauce

salt & pepper

 

200ml water

Put the chopped veg into your slow cooker dish.

 

Mix together the flour, parsley, mustard powder, salt & pepper. Put the beef into a plastic bag or bowl, add the flour & seasonings & toss to coat.

Add the beef to the veg with the Worcestershire sauce & crumble over the stock cubes.

Stir well, put on the lid & set the timer to 8 hours on the low setting.

 

Serve hot with fluffy mash or crusty bread.
