Salmon & Broccoli Pie

I've gone for sliced potato for this one instead of mash just for a change!

I use frozen salmon fillets & frozen broccoli for this recipe as it keeps costs down but you can of course use fresh if you prefer.

Ingredients

  • 2 skinless salmon fillets, cut into cubes
  • 175g broccoli florets
  • 150g garlic & herb soft cheese
  • 200ml vegetable stock
  • 2 medium white potatoes, thinly sliced (no need to peel)
  • 2tbsp cornflour mixed with 2tbsp cold water
  • salt & pepper

Cook the broccoli in boiling salted water until just tender remove from the pan & set aside. Keep the water in the pan & add the potato slices. Parboil for 10 minutes drain & set aside while you make the sauce.

Place the stock & cream cheese into a saucepan & heat gently until the cheese has melted. Add the cornflour & water mixture & stir until thickened & smooth. Season with salt & pepper.

Carefully mix the salmon & broccoli with the sauce then transfer to an ovenproof dish.

Arrange the potato slices on top making sure they overlap slightly then brush with a little oil or melted butter. Place in the oven for 25 minutes until the potato is golden brown.

Serve with extra veg if you like.
