Lemon & Herb Chicken

These chicken skewers are easy to put together & taste great cooked on the BBQ. However, if the weather is not on your side they can be oven cooked & are just as tasty! I've used a mix of fresh Parsley & Sage but you can use whatever herbs you like, Oregano would work really well too.

 

Serves 3-4 people Approx £1 per serving

Prep time including marinating time 3-4 hours approx (or overnight)

Cooking time 25 minutes

Ingredients

  • 3-4 chicken breasts, flattened & cut into strips
  • 4 tbsp olive oil
  • juice of 2 lemons
  • pinch of salt
  • 1/2bunch fresh flat leaf parsley, chopped
  • 1/4 bunch of fresh sage, chopped

 

Thread the chicken onto skewers (if you are using wooden skewers remember to soak them first to stop them from burning). Place them in shallow dish.

In a jug or small bowl, mix together the oil, lemon juice & herbs & add a pinch of salt.

 

Pour the mixture over the chicken evenly. Cover & place in the fridge to marinate for 3-4 hours or over night if possible.

If cooking in the oven, pre-heat to 180 Fan/200C/Gas 6.

Remove the chicken from the fridge & transfer to an ovenproof dish or baking tray. Pour over any leftover marinade.

Cook in the oven for 20-25 minutes.

Serve hot or can be eaten cold.
