Ginger & Honey Chicken

Marinade the chicken for at least 3 hours or all day/overnight if possible. With only a couple more ingredients to add it's ready in under 15 minutes so if you make the marinade in the morning it's great for a weeknight!

I use the ready to cook noodles which I sometimes pick up in places like Home Bargains but are readily available in all supermarkets.

Ingredients

  • 2 chicken breasts, cut into strips
  • 4 tbsp olive oil
  • 1 tbsp runny honey
  • 1 tbsp ground ginger
  • 1/2 tsp ground black pepper
  • 2 cloves garlic, crushed
  • 1 bunch spring onions, chopped
  • 2 tbsp soy sauce mixed with 2 tbsp cold water
  • 1 pack ready to cook noodles 

 

Place the chicken into a plastic zip top bag.

Mix together the oil, honey, ginger, garlic & pepper & pour into the bag with the chicken.

Fasten the bag & tip it to get the marinade around the chicken.

Place the bag in the fridge for 3 hours or longer if you can.

To cook, place a large frying pan or wok over a medium to high heat. Add the chicken along with the marinade & 2/3 of the spring onions. Cook for about 8 minutes until the chicken is starting to brown then add the noodles, soy sauce & water. Cook for a further 2 minutes stirring until the noodles look darker.

Serve immediately garnished with the remaining spring onions.
