sprout & bacon bake

Love them or hate them Brussels sprouts are part of Christmas & if you are looking for an interesting new way to serve them I may have the answer!

Mr W is not a fan but always insists on having two on Christmas Day “because it's Christmas!” but even he has been converted thanks to this recipe!

You can even prepare it in advance. Follow the recipe up to adding the cream, cool & cover the dish with cling film & place in the fridge the day before. When ready, remove from the fridge & add the cream & cook as per instructions.

 

Serves 4-6 Approx 50p-74p per person

Ingredients

500g Brussels sprouts, washed, trimmed & cut in half lengthways

5 slices bacon (smoked or unsmoked), chopped

1 onion, chopped

300ml double cream

 

salt & pepper

Pre-heat the oven to 180Fan/200C/Gas 6

Place the sprouts cut side up into a an ovenproof dish. Drizzle with oil & season with a little salt & pepper. Place in the oven for 25 minutes.

Meanwhile place a large frying pan over a medium heat & dry fry the bacon until starting to colour. Set aside.

 

Add 1 tbsp butter & 1 tbsp oil to the pan & cook the onion until soft. Put the bacon back in the pan & cook for another minute. Remove from the heat.

Remove the sprouts from the oven, they should be tender & browned on top.

Spoon the bacon & onion over the sprouts then carefully pour the cream on top as evenly as possible. Season with a little more salt & pepper.

Place back in the oven for 5 minutes, the cream should be bubbling & thickened slightly.

 

Serve hot.
