Cheesy Crumbles

These delicious discs of cheesy, flaky loveliness are great served with drinks or anytime you happen to be passing them! The cayenne gives a nice spicy kick too, add a bit more if you want them spicier! WARNING! These nibbles are highly addictive!


Makes about 34 (depending on how thick you roll the dough!), approx 9p each

Ingredients

225g plain flour

225g unsalted butter

225g strong cheddar, grated

black pepper

a pinch of cayenne pepper

a pinch of english mustard powder

1 egg, beaten


Pre-heat the oven to 180 Fan/200C/Gas 6 & line 2-3 baking sheets with baking paper.

Sift the flour into a bowl with a pinch of salt, add the butter & rub together until the mixture resembles breadcrumbs.

Add the cheese, pepper, mustard, cayenne & enough egg to bind & work together to make a paste. Don't overhandle or the dough will become greasy.



Roll out the dough on a floured work surface to about 5mm thick.

Cut into rounds with a 2 inch cutter & place on the baking sheets.

Brush with egg wash & place in the oven for 10 minutes.





Once cooked, allow to cool on the trays for about 5 minutes (don't worry if they seem soft at first, they firm up once cool!) then transfer to a wire rack.
