Chicken Strips & Sweet Potato Wedges

We all have a guilty pleasure or 2 & one of mine is a certain pizza company beginning with “D”! I'm a particular fan of their sides & got to thinking that I could have a go at making my own. I also decided to try sweet potato instead of regular spuds & was very pleased with the result! As both the wedges & chicken are oven baked they are a little healthier too!

 

 

 

Ingredients for Chicken Strips

2 chicken breasts, cut into strips

4 tbsp dried breadcrumbs

1 tsp ground black pepper

½ tsp mustard powder

4 tbsp plain flour

2 eggs, beaten

 

Ingredients for Potato Wedges

2-3 (depending on their size) sweet potatoes, scrubbed & cut into chunky wedges.

1 tbsp paprika

a pinch of chilli powder

2 tbsp olive oil

 


CHICKEN STRIPS

 

Serves 2 Approx £1.15 each

Prep time 10 minutes Cooking time 20 minutes

Pre-heat the oven to 180Fan/200C/Gas6

Place the breadcrumbs into a shallow bowl & add the pepper & mustard powder, mix together.

Place the egg & flour in shallow bowls.

 

Take the chicken strips one by one & coat first in the flour, then egg then breadcrumbs. Try & use one hand for the flour & egg & the other for the breadcrumbs to avoid getting too messy!

 

 

 

Put the coated chicken strips onto a lightly oiled baking tray & bake for 20 minutes turning halfway through cooking.

Serve with dips of your choice.

 

 

SPICY SWEET POTATO

WEDGES

 

Serves 2 Approx 50p each

 

Prep time 10 minutes Cooking time 25 minutes

 

 

Place the sweet potato wedges into a large bowl.

 

Sprinkle over the paprika & chilli powder then drizzle over the oil. Mix well with your hands to make sure all the wedges are coated.



 

Spread the wedges evenly onto a baking tray & place in the oven for 25 minutes turning halfway through cooking.

 

Serve with dips of your choice.
