My "No Parm" Carbonara!

One of the ingredients traditionally used in this recipe is Parmesan cheese but this can be expensive! To keep costs down (like I do!) I've used a good strong cheddar & grated it very finely. The result, I think, is just as delicious however if you do have Parmesan of course use it!

Serves 2 (easily doubled etc!) Approx 77p per person

Prep time 10 minutes Cooking time 10-12 minutes


250g dried spaghetti

4 slices streaky bacon, chopped

1 clove garlic, crushed

1tsp dried parsley

30g finely grated cheddar

75ml double cream

1 egg yolk

Cook the spaghetti in boiling salted water according to packet instructions.

Meanwhile put a large frying pan on medium heat & cook the bacon until golden adding the garlic & parsley after about 5 minutes.

Add the cream & bring to the boil then remove from the heat.

Drain the pasta & add to the cream along with the egg yolk & stir well making sure the pasta is well coated then mix in the cheese.

Serve immediately.
