Spicy Lamb Bake

Lamb mince is obviously more expensive than beef or pork but this recipe adds plenty of extras that help it to go further!

Panko breadcrumbs are widely available now but if you can't get any then use crushed puffed rice cereal, it works just as well!

I used cayenne pepper but you could use chilli powder if you prefer. Also I have made these in individual dishes but if it is more convenient of course use one larger dish.

Ingredients

  • 500g Lamb mince
  • 1 red pepper & 1 yellow pepper, finely chopped
  • 1 onion, finely chopped
  • 500g jar or carton of passata
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • pinch of sugar
  • salt & pepper
  • 50g Panko breadcrumbs or 50g puffed rice cereal crushed

Place a large frying pan over medium to high heat & brown the mince in batches. Set aside.

Add 2 tbsp of oil to the pan & cook the onion & peppers for 5 minutes before adding the spices. Stir well to make sure everything gets coated. 

Cook for another minute then put the mince back in with the onion & peppers & stir everything together.

Pour in the passata, add a pinch of sugar & season with salt & pepper.

Stir well again & leave to simmer for about 10-15 minutes until it has reduced & thickened a little. Check the seasoning then remove from the heat.

Pre-heat the oven to 190 Fan/210C/Gas 7.

Spoon the lamb into ovenproof dishes (or one larger one if you prefer) then top with the panko crumbs. Put the dishes on to a flat baking tray to make it easier to take in & out of the oven.

 

 

 

 

 

Place the bakes in the oven for 20 minutes.

Serve immediately.
