Ham & Spring Onion Frittata

Sounds a bit fancy doesn't it?! Well don't worry it's really simple to put together! A frittata is the Italian version of an omelette & what makes it different is that all the ingredients are mixed together at the start. Once you have tried my combination why not create your own? This is also a great way of using up leftovers in your fridge! Also a perfect recipe for little helpers! (I did have help!)

Ingredients

4 large eggs

½ bunch spring onions, chopped

100ml low fat crème fraiche

2 slices ham, chopped

a handful of grated cheese

salt & pepper

knob of butter

olive oil

In a large bowl lightly beat the eggs, then add the crème fraiche, cheese, spring onions & ham. Mix well then season with salt & pepper.

Melt the butter in a large frying pan then add the oil. Pre-heat the grill. Pour in the egg mixture & cook for about 10-15 minutes. You can check by gently lifting the sides with a spatula, it should be a nice brown colour but not burnt.

Take the pan off the heat & place under the grill. Cook for a further 5-10 minutes until cooked through & the eggs are set.

Cut into wedges & serve.
