A healthier, tasty alternative to regular rice. Adding the spices gives a nice twist but you can keep it simple with just salt & pepper. Serve as a side with whatever you like!

Ingredients
1 head cauliflower, broken into florets
1 onion, finely chopped
1-2 cloves garlic, crushed
1 tsp ground cumin
1 tsp ground coriander
a pinch of cayenne pepper or chilli powder (optional)
salt & pepper
Wash & dry the cauliflower.
Place into a food processor & pulse until you have fine grains. Alternatively you could use a box grater.
Heat 1 tbsp of oil in a large frying over a medium heat.
Cook the onion for 5 minutes until starting to soften then add the garlic & spices. Cook for another 2-3 minutes before adding a little more oil to the pan. Tip in the cauliflower grains & stir well to mix with the onion & spices.
Cook for about 5-8 minutes or until the cauliflower is heated through & slightly tender.
Serve.
