Two of my favourite vegetables, made even better with a creamy, cheesy sauce. Use fresh or frozen cauliflower & broccoli.
Serves 4 Approx 60p per person

Cooking time: 15-20 minutes
150g light cream cheese
100g cheddar, grated
Cook the cauliflower & the broccoli until just tender, drain & set aside in the pan.
Put the cream cheese into a saucepan over a low heat. When it is just starting to melt add the cheddar & stir until melted. Season with black pepper, there is plenty of salt in the cheese!
Pour the cheese sauce onto the broccoli & cauliflower in the pan & stir well to make sure all the veg is coated.
Transfer to an oven proof dish.
Cook for about 15-20 minutes at 200C/Fan 180C/Gas 6 until brown & bubbling on top & serve.
